I love this type of cake and for a long time I struggled to make this fixed cake like my mother did. I remember that my mother made 10 -12 identical cakes for the holidays, twelve for Christmas, and ten for Easter because two trays were occupied with the lamb. Given that he was making these industrial quantities, I had to split the ingredients for two normal cakes. The nice part is that they came out and I felt the unique taste of the cake from childhood.

ingredients:

For the hull:

– 1 kg of flour, preferably three-zero flour (000),

– 6 yolks,

– 250 grams of sugar,

– 2 generous tablespoons of lard or butter,

– 100 ml of oil,

– fatty milk, about 400 ml,

– two sachets of yeast or fresh yeast fixed the recommended amount on the package for one kg of flour,

– a pinch of salt,

– peel of a lemon or orange,

– rum essence,

– a vanilla pod or essence.

For the filling:

– 350 g walnuts,

– 6 egg whites,

– 150 g of sugar,

– a little salt,

– two tablespoons of cocoa,

– a handful of raisins,

– rum essence,

– 100 g of shit.

For greased cakes:

– an egg with a little sugar.

Method of preparation:

It is very important to flour and knead the dough, if you want an airy, fluffy cake that breaks into strips. I remember that my mother sifted the flour, and then she put it on the hearth of the hot stove, and when she started to prepare the crust, she sifted the flour again. Since I don’t have a hearth, I sifted the flour and left it on the kitchen counter until the next day when I started kneading the dough, and the next day I sifted it again. In the middle I formed a hole inside which I added yeast and a little sugar, over which I added half of the boiled milk and still warm. Let the yeast activate for 5-10 minutes, and then continue to put the rest of the ingredients and knead the dough well until it is no longer sticky and tends to grow slightly in our hands, let it rise for about an hour and then continue kneading for another 10-15 min.

While the dough is growing, prepare the filling. Beat the egg whites together with the sugar, over which we add the walnuts, cocoa, salt and finally the raisins together with the rum essence.

As soon as we have finished the filling we can start the cakes, we take the dough that we divide depending on what shape we want to give to the cakes. I divided it in two, and I divided each part differently because I made two different cakes (one woven in two and one in three).

I then spread the sheets of dough over which I added the walnut cream with raisins, the pieces of shit and I rolled the dough. After I kneaded cakes, I put them in a pan greased with butter and floured wallpaper, and let them rise for about 15 minutes. As soon as the time elapsed, I put them in the preheated oven at 180 degrees for 65 minutes.
